Yummy Holiday Recipes

What’s to love more than getting to eat anything you want on Christmas day? Well, nothing is to love more, and that’s why we want to share with you some delicious sweet treats to bake and share with your loved ones. Here at Radius Insurance Agency, we love unique and different recipes! Make sure to let us know what your favorite recipe is this season!

1) Chocolate-Orange Drop Cookies

  • ½ cup butter, softened
  • 8 oz. cream cheese
  • ½ cup of sugar
  • 1 egg
  • 1 teaspoon orange zest
  • 1 teaspoon vanilla
  • 1 cup all-purpose flour
  • ½ teaspoon salt
  • 6 oz. semi-sweet chocolate chips

Preheat oven to 350 degrees F.

Mix together in large mixing bowl butter, cream cheese, sugar, egg, orange zest and vanilla flavoring.  Blend well.  In a medium bowl, whisk salt into flour. Add flour mixture ¼ cup at a time into wet ingredients until just mixed. Stir in chocolate chips. Lightly grease baking sheet and using a teaspoon drop mix on baking sheet about 1 inch apart.  Bake 12 minutes.

2) Low-Country Cookies

  • ü  1 cup chopped pecans
  • ü  ½ cup milk
  • ü  1 egg
  • ü  1 cup sugar
  • 12 tablespoons butter
  • 1-16oz box of graham cracker
  • 1 cup or 3 cans shredded coconut
  • 2 cups powdered sugar
  • 1 teaspoon vanilla
  • 4 tablespoons butter
  • 3 tablespoons milk

Line a 13 x 9-inch pan with whole graham crackers.  Melt butter in saucepan and add sugar.  Beat egg and milk together; add to butter mixture.  Bring to a boil, stirring constantly.  Remove from heat.  Add nuts, coconut, and 1 cup graham cracker crumbs.  Pour over crackers in pan. Cover with another layer of whole graham crackers. Prepare topping.


Beat all ingredients together and spread over top layer of crackers. Chill. Cut into squares.

3) Chocolate Gooey Butter Cookies

  • 1 teaspoon vanilla extract
  • Powdered sugar to sprinkle on cookies
  • 1- 18oz box moist chocolate cake mix
  • 1-8oz brick of cream cheese
  • 1 egg
  • 1 stick of butter

Preheat oven to 350 degrees F. In a large bowl with an electric mixer, cream the cream cheese and butter until smooth. Beat in the egg. Then beat in the vanilla extract. Beat in the cake mix. Cover and refrigerate for 2 hours to firm up so that you can roll the batter into balls. Roll the chilled batter into tablespoon sized balls and then roll them in confectioner’s sugar. Place on an ungreased cookie sheet, 2 inches apart. Bake 12 minutes. The cookies will remain soft and gooey. Cool completely and sprinkle with more confectioners’ sugar, if desired.
